Apple and Cinnamon Cookies

Time for something simple and homely. These are the perfect way to use up a couple of eating apples when friends are coming over or you want something with your cup of tea.

Ingredients

  • 100g butter, softened
  • 60g light brown sugar
  • 1 tbsp bramley apple sauce
  • 2 tbsp golden syrup
  • 1 tsp cinnamon
  • 50g porridge oats
  • 120g plain flour
  • 1/2 tsp baking powder
  • one eating apple (approx. 60-70g)

Apple and Cinnamon Cookies

Time for something simple and homely. These are the perfect way to use up a couple of eating apples when friends are coming over or you want something with your cup of tea.

Method

Preheat the oven to 190°C or 180°C fan.

Cream together the butter and sugars with an electric whisk or spoon until light and fluffy. Mix in the apple sauce, golden syrup and cinnamon.

In another bowl, mix together the oats, flour and baking powder.

Core the apple and cut into small pieces, adding them to the flour mix.

Mix the dry ingredients into the butter until a dough forms. Divide into twelve pieces and distribute on two baking trays, flattening them slightly with the back of a spoon.

Bake for approximately 12 minutes, or until golden, and then cool until solid.
